Basic Cure

This is the basic cure I use from Ruhlman’s Charcuterie.

Ingredients:

  • 1 pound/450 grams kosher salt
  • 8 ounces/225 grams sugar
  • 2 ounces/50 grams pink salt / prague powder #1 

Instructions:

  1. Mix all ingredients together thoroughly
  2. Store in an air-tight container – will keep indefinitely
