Basic Cure
This is the basic cure I use from Ruhlman’s Charcuterie.
Ingredients:
- 1 pound/450 grams kosher salt
- 8 ounces/225 grams sugar
- 2 ounces/50 grams pink salt / prague powder #1
Instructions:
- Mix all ingredients together thoroughly
- Store in an air-tight container – will keep indefinitely
